Home made Tomato Ketchup
Ingredients
2 1/2 kg Tomatoes

6 Garlic cloves
1 cup Light Corn syrup
1/2 cup White Vinegar
1 cup Water from the boiled tomatoes
4 Cloves
1 stick Cinnamon
1/2 cup Sugar or more as per the sweetness required
Salt to taste
Method
Add the tomatoes, cinnamon,cloves and garlic in 1 1/2 cup hot water and boil for few minutes till the tomato skin has ruptured. Take the tomatoes and garlic cloves out. Retain 1 cup water from the tomatoes. Peel the tomatoes. Blend the tomatoes and garlic cloves in a blender. Strain the tomato purée. Take a pot. Combine all the ingredients over medium heat. Whisk until smooth. When mixture comes to a boil, reduce heat and simmer. Stir it often. The tomato purée will reduce to 1/2 the quantity. The tomato ketchup will give a glossy look and will be thick. To check, dip a spoon in the ketchup and it will stick to the spoon. Remove the pot from heat and cool. Store in the bottles and refrigerate.
