Roasted Garlicky Lime Chicken



This dish can be served as a starter. The longer it is kept for marination the chicken will be soft and juicy.So keep it as long as 5 to 6 hours for marination. It’s a easy recipe and delicious in taste too. This dish is good to be served in parties. 



Ingredients
5  Chicken Drumsticks
1 tbsp Garlic paste
Juice of 1 Lime 
1 tsp chopped Coriander Leaves 
Salt to taste
1/2 tsp Pepper powder 
1/2 tsp Chilli powder
3 tbsp Fresh Cream
2 tbsp Grape seed Oil or any Oil


Method 
Take a mixing bowl. Add the lime juice, garlic, fresh cream, red chilli powder and pepper powder.  Whisk it well. Add the oil and whisk it once again. Apply the marination on the chicken drumsticks. Keep it aside to marinate for at least for 2 hours. Arrange the marinated chicken drumsticks on a foil baking sheet and apply the remaining marination on the chicken drumsticks. Roast it in a preheated oven for 20 to 30 minutes at 250 degree celsius, flip the chicken pieces in between and spray oil on the chicken pieces. After it is done then sprinkle with coriander leaves. Serve it hot.

Chickpea and Cottage Cheese Salad with Raw Mango and Coriander Chutney Dressing...
This salad has an Indian touch made with green raw mango and coriander leaves chutney with a drizzle of mustard oil for flavour.... This can be served as a vegetarian starter dish.

For the Dressing
Ingredients
1 small bunch of Coriander leaves chopped
1 small Raw Mango chopped
2 Green chillies
1 small piece Ginger sliced
Salt to taste

Method
Take a grinder and add coriander leaves, green chillies, raw mango, ginger and salt. Grind it into a paste. 

For the Salad
Ingredients
2 cups of boiled Chickpeas
1 cup of Cottage Cheese cut into small pieces
2 Cucumber cut into small cubes
2 Tomatoes cut into small cubes
1 Onion chopped
Few Coriander leaves chopped
1 tbsp Lime Juice
Green Chutney
Salt to taste
2 tbsp Mustard Oil

Method
Take a bowl. Add the chickpeas,  cottage cheese, onion, tomato, cucumber and coriander leaves. Mix it.  Add the salt and lime juice. Mix it. Add the green chutney and mustard oil. Mix it. This salad can be served as a vegetarian starter.

Absolutely refreshing drinks to beat the Summer Heat... 


Mojito is a traditional Cuban highball.
Traditionally, a mojito is a cocktail that consists of five ingredients: white rum, sugar (traditionally sugar cane juice), lime juice, sparkling water, and mint. The original Cuban recipe uses spearmint or yerba buena, a mint variety very popular. It is a combination of sweetness, refreshing citrus, and mint flavors is intended to complement the potent kick of the rum, and has made this a popular summer drink.The cocktail has a relatively low alcohol content. When preparing a mojito, lime juice is added to sugar (or syrup) and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded.Then rum is added and the mixture is briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. The drink is finally topped with crushed ice and sparkling soda water. Mint leaves and lime wedges are used to garnish the glass.

Ingredients
4 Frozen Strawberries slices
Handful of Mint Leaves  
1 Lime cut into slices 
4 tbsp Sugar + 1/2 glass water mixed
1 tsp Chat Masala
Chilled Club Soda

Method 
Take a tall glass, add the sugar syrup, strawberries, 2 lime slices ( keeping the centre pieces for garnishing), few mint leaves (keep few for garnishing) and chat masala. Mash the mixture with the muddler. Take 2 tall glasses, pour 1/2 the mixture in one glass and the rest into another glass. Pour the club soda, take few mint leaves and add it in the drink and garnish with lime slices.
