Mangalorean Buns with Veg Sagu


 May times we have visited Mangalore and every time we enjoyed this meal during breakfast. My friend’s MIL makes one of the best Mangalorean Buns. This dish is very popular in Mangalore and is available in most of the restaurants for breakfast. 

Here is the recipe - 

Mangalore Buns

 Ingredients

2 cups Whole Wheat flour  Flour

2 medium sized Ripe banana

2 tbsp Jaggery powder or Sugar 

½ tsp Cumin powder

1/4 tsp Baking soda

Salt to taste

2 tbsp Curd

1 tsp ghee

oil for deep frying


Method

Take a mixing bowl, mash the bananas, now add sugar, salt,  baking soda, cumin powder and curd . Mix the ingredients well into a smooth paste. Add the flour and knead the flour into a dough, add little more flour if required. The dough is slightly sticky. While kneading you can apply some ghee and knead. Keep the dough covered in a bowl overnight. Knead the dough the next morning. The dough is a bit sticky, so dust some flour and take medium sized balls from the dough and roll into round pooris. Fry each poori into medium hot oil till they are puffed and golden. Serve the buns as snacks or enjoy for breakfast with veg sagu or with coconut chutney or Sambar. 


Veg Sagu Recipe - 

Wet Paste 

Ingredients 

1 small Onion chopped 

1 small Tomato chopped 

2 Green Chillies 

Few Coriander stems cut into pieces 

1 small piece of Ginger 

2 tbsp grated Coconut or desiccated Coconut 

4 to 5 Cashew nuts

Salt to taste 

1 tsp Jagger 

1/2 tsp Turmeric powder 

1/2 tsp Cumin powder 

1/2 tsp Kashmiri chilli powder 

1/4 tsp Chilli powder 


Method 


Grind all the above ingredients into a fine paste with water. 


Veg Sagu 

Ingredients 

1 medium bowl around 250 grams of vegetables cut into small pieces - Carrot, French Beans, Cauliflower, Capsicum, Green Peas and Potato

2 Green Chillies 

Few Curry leaves 

Few Coriander leaves chopped 

1/2 tsp Chana dal

1/2 tsp Urid dal 

1/2 tsp Mustard seeds 

1 Dried Red Chilli cut into pieces 

Few Cashew nuts  

Wet Paste 

2 tbsp Oil 


Take a pressure cooker, add oil, once the oil heats up, add the dried chilli, chana dal and Urid dal. Once the dals are half fried, add mustard seeds and curry leaves. Saute until the mustard seeds crackle. Add the vegetables, cashews and green chillies. Sauté for 2 minutes. Add the wet paste and continue to cook until the oil releases from the paste. Add 3/4 cup of water. Stir, cover the pressure cooker and give 2 to 3 whistles. Once the air pressure releases, check the gravy, as per choice, we can reduce the gravy. Garnish with coriander leaves. Serve with poori, buns, Paratha etc.

Oats - Barnyard Millet and Semolina Vermicelli Idlis with Carrot


Oats, Barnyard millet and Semolina Vermicelli with Carrots… 

Quick breakfast or snack,  easy to make and healthy too. Serve them with sambar or any chutney of your choice. Flatten rice can be also added. 

Measuring cup measurement 


Coconut Chutney 

Ingredients 

1/2 cup Grated Coconut 

2 Green Chillies 

Few Curry leaves 

4 tbsp Curd

Salt to taste 


Method 

Grind all the ingredients together, if need add little water and make fine paste. 


For the Idli

Ingredients 

1 cup Oats

1/2 cup Barnyard millet

1/2 cup Semolina Vermicelli 

1 small grated Carrot 

Few Curry leaves 

2 tbsp grated Coconut 

2 tbsp Curd 

Salt to taste 

1 tsp Eno 

1 tbsp Coconut oil


Method 

Take a grinder jar, add the oats and Barnyard millet, wash, add 2 cup water, let it soak for 10 minutes. Add salt, grated coconut and curd. Grind the ingredients in a grinder. Pour the batter in a bowl, keep it aside for 10 minutes. Add the vermicelli. Continue to soak for 15 minutes more. Take a idli steamer. Grease the mould with coconut oil. Add the eno in the batter. Gently stir the batter. Pour the batter into the idli mould. Add little grated carrot and a curry leave on the batter. Steam the idlis for 20 minutes. Check the idlis inserting a stick. If the stick comes out smooth, then the idlis are done. Once done remove the idli moulds and let it cool a bit, before scooping out the idlis from the mould. Serve the idlis with coconut chutney.

Oats Uttapam

 


Oats Uttapam - A quick, tasty and instant snack / breakfast that is also very healthy….. 

its easy to make and I am sure children will love it.. Serve this with chutney of your choice. 

Here is how I make it at home …

 

For the Veg Masala Spread - 

Ingredients 

4 tbsp chopped Onion 

4 tbsp chopped Tomato 

1 chopped Green Chilli 

2 tbsp chopped Coriander 

Few chopped Curry leaves 

2 tbsp Grated Coconut 

1 tsp Sambar powder 

Salt to taste 

Method- 

Mix all the above ingredients together and keep it aside 


For the Batter- 

Ingredients 

3/4 cup Oats 

1/4 cup Semolina 

2 tbsp Curd 

Salt to taste 

Method 

Take a blender jar, add the above ingredients and add 1/2 cup water, mix and keep it for 10 minutes, now add little water at a time and blend all the ingredients together, the batter should be thick dropping consistency. Let the batter rest for another 15 minutes. 


To make the Uttapam- 

Ingredients 

Batter

Veg Masala spread 

Ghee 

Method 

Take a skillet, once the skillet is hot, reduce the flame to medium low, pour a big ladle spoon of batter on the skillet, spread the batter a bit, spread the veg masala spread over the batter. Drizzle little ghee. Cover the uttapam and let it cook for a minute, open the cover and check, turn the uttapam and let it cook for another minute. Serve the uttapam with Chutney of your choice.

Vateli Dal na Khaman Dhokla




This is a very popular snacks from the state of Gujarat.. I have grown up enjoying this with fafda and Jalebi from my childhood days, this was my father’s favourite combo… very often this was our breakfast in the morning specially on weekends as I have grown up in Gujarati neighbourhood… 
Lots of Chana dal was there in my pantry, so had to make this recipe.. Here the Chana dal has to be fermented overnight.
 


Here is the recipe - 
Ingredients 
1 cup Chana 
1 tsp Ginger - Green Chilli paste
1 Green chilli cut into half and slit
Few Coriander leaves chopped 
Few Curry leaves 
2 tbsp Fresh grated Coconut 
2 tbsp Nylon Sev (optional)
Salt to taste 
1/2 tsp Turmeric powder 
1/2 Mustard seeds
Pinch of Asafoetida 
1/2 tsp Eno 
2 tbsp Curd
1 tbsp Sugar 
1/4 cup Water
1 tsp + 1 tbsp + 1 tsp Oil

Method 
Soak the Chana dal for 5 to 6 hours. Grind the Chana dal into smooth paste, the batter should be of thick consistency. Let the batter ferment overnight. Take the batter, add ginger- green chilli paste, salt, turmeric powder, curd and 1 tsp oil. Beat the batter well. Add eno, mix the batter once. Take a steamer, grease the dhokla vessel, pour in the batter, fill 3/4 of the vessel. Steam the dhokla for 20 minutes,  insert a toothpick to check. Once done, remove the dhokla vessel and keep it aside to cool, meanwhile take a small pan, add 1 tbsp oil, let the oil heat, add the mustard seeds, asafoetida, curry leaves and green chilli, once the mustard seeds splatter, switch off the flame. Take 1/4 cup of water and add sugar. Once the sugar dissolves add the sugar water into the seasoning. Cut the dhoklas into diamond shape, drizzle the seasoning over the dhokla, garnish with coriander leaves and grated coconut. Serve with green chutney and nylon Sev.

Whole Wheat Atta Cookies




These are home baked whole wheat cookies, we can enjoy these with a hot cup of tea. These cookies can stay for a week in a air tight container. 

Ingredients 

1/2 cup Ghee

 1/2  cup Powdered Sugar 

 1 1/4 cup Whole wheat flour 

 3 tablespoons fine Semolina 

2 tbsp Milk powder 

 1/2 teaspoon cardamom powder

 1/4 teaspoon salt

1/4 tsp Baking Powder 

1 tbsp  or more Milk 

 1 tbsp Almond flakes 

Some Kesar strands 


Method 

Add the ghee, sugar, salt and cardamom powder in a bowl and beat it well. Add the whole wheat flour, semolina, milk powder and baking powder into the bowl and mix it together till crumbs are form. Add the milk very little at a time until a dough is form. Take a baking tray. Make small lime size portions of the dough. Take a portion and slightly flatten the dough and create a small cavity in the centre. Please the cookies on the tray leaving little gaps in between the 2 cookies. Garnish with almond flakes and Kesar strand. Bake in a pre heated oven at 180 degrees celsius for 15 to 20 minutes depending upon your oven temperature. Cool the cookies in the same tray until the cookies cools down completely before eating it. Keep it in a air tight container.

Taler Bora / Sugar Palm Fritters

 


Taler Boras are very popular in Bengal during this month, specially during Janmashtami as it’s supposed to be favourite of Shree Krishna. Ripe sugar plum pulp is extracted and made into various types of traditional sweets like Taler bora, Taler luchi or pitha. The golden pulp of the sugar palm, wheat flour, all purpose flour, semolina or rice flour, sugar, salt and grated coconut is used to make the batter, which is then dip fried to make fritters.  Some people add mashed bananas into the batter. This can be enjoyed as snacks, but it’s so delicious  that you can’t stop eating until it’s over. 


Ingredients 

1 Sugar Palm

1/2 cup Wheat Flour 

1/2 cup Rice Flour 

1/4 cup Grated Coconut 

1/4 cup Sugar

1/4 tsp Salt 

Oil for frying 


Method 

Take a bowl, add wheat flour, rice flour, salt and sugar. Add the sugar palm as required to make a thick batter, whisk until the sugar dissolves. Add the coconut, stir and mix the batter well. Rest the batter for 10 minutes. Heat the oil in a wok, drop small portions of the batter into the oil. Fry the fritters until golden brown in colour. Remove the fritters on a paper towel. Enjoy.

Mango Whole Wheat Cookies

 

Here are cookies made with Mango Pulp. I have used Alphonso mango. A tbsp of Oats can be added while roasting the flour. It’s delicious, can’t stop at one..


For Mango Paste 

Ingredients 

1/2 cup Mango Pulp made fresh 

Method 

Add the mango pulp into a pan, cook on a medium low heat until the liquid from the pulp has reduced to 3 tbsp spoon 


For the Mango Cookies 

Ingredients 

1 cup Wheat Flour 

1 tsp Almond Flakes  - Optional 

1/4 tsp Salt 

1/4 tsp Baking Powder 

Pinch of Cardamom Powder - Optional 

1/2 cup Sugar 

1/2 cup  Ghee 

3 tbsp Mango Paste 


Method 

Take the whole wheat flour in a pan, dry roast the flour on a low until an aroma releases, but the flour shouldn’t change colour. Switch off the flame, let the flour cool down, add cardamom powder, salt and baking powder, mix the flour. In another bowl add ghee, sugar and mango paste. Whisk all the ingredients together until the sugar dissolves. Add in the flour. Mix and knead it into a soft dough. Take a baking tray, take small lime size portion of the dough and roll the dough into small ball. Pre heat the oven at 180 degrees celsius .Place the dough ball on the baking tray and gently press the center of the dough ball to create a small cavity. Keep a gap between the 2 cookies. Repeat the process until all the dough is over. Place an almond flake in the center cavity and press the flakes gently. Bake the cookies at 170 degrees celsius for 15 minutes, depending upon the oven temperature. Remove the cookies from the oven. The cookies will look soft, but once it cools down it will crunchy from top. Let the cookies remain on the hot tray until the tray cools down completely. Once the cookies have cooled down then keep them in an air tight container and enjoy.

Ripe Jackfruit Cake

 

Rustic jackfruit cake made with leftover ripe jackfruit. It’s healthy and delicious. 

Ingredients 

1 cup Wheat flour 

1 cup Fine Semolina 

1 cup Powder Jaggery 

1 tsp Baking Powder 

1 tsp Baking Soda

1/2 tsp Cardamom Powder 

1/4 tsp Salt

2 tbsp Almond Flakes 

1/2 cup Ripe soft Jackfruit 

1/2 cup Ripe firm Jackfruit chopped 

1/4 cup Oil

1/4 cup Curd 

1 cup Coconut Milk 


Method 

Take wheat flour, semolina, jaggery powder, cardamom powder, salt, baking powder and baking soda. Take a sieve mesh and sieve all the ingredients together. Take a bowl, pour oil, curd and coconut milk and whisk it together.  Pour the liquid into the dry ingredients, and whisk all the ingredients together into a thick dropping consistency. Add the almond flakes and both the types of jackfruits. Mix the ingredients together. Take a grease baking mould. Pour in the batter up to 3/4 the size of the mould. Bake the cake at 180 or 200 degrees temperature depending upon the oven temperature for 55 to 60 minutes. Insert a toothpick and check. Once done remove the cake and cool it. Unmould the cake and let it cool completely before cutting.

Cheesy Veggie Bombs



This is a very easy starter or snacks for the evening. I am sure children will love it too... vegetables like zucchini, brinjal, spinach, boiled raw banana are used with cottage cheese or grated cheddar cheese. To enhance the taste used mozzarella cheese cubes in the center of the veggie balls. Serve with tomato ketchup. 




Ingredients 
1 medium size  Brinjal peeled and chopped into small cubes 
1 medium size Zucchini peeled and chopped into small cubes 
Few Spinach Leaves chopped 
1 medium size Onion chopped 
5 to 6 Garlic Cloves chopped 
Few Green Chillies chopped 
Few Coriander leaves chopped 
1/2 cup  Cottage Cheese mashed or grated Cheddar Cheese 
Mozzarella Cheese cut into small cubes
Salt to taste 
1 /2 to 1 tsp Pepper powder 
1/2 tsp Curry powder or Cumin powder  (Optional)
1 cup + 1 cup Bread crumbs 
1 tbsp Oil + Oil to Fry

Method 
Take a pan, add 1 tbsp oil, once the oil heats up, add onion and garlic, sauté till the onions are translucent. Add the brinjal, zucchini, spinach and green chillies. Sauté and cook until the vegetables are cooked and the moisture has dried up. Add the salt, pepper and curry powder, stir and cook all the ingredients together. Switch off the flame. Let the veggie mixture cool down. Add 1 cup of the bread crumbs, cottage cheese or cheddar cheese  and coriander leaves. Mix and bind all the ingredients together. The mixture should not be wet,  as it has to form into a ball. Incase it’s wet, add more bread crumbs. Apply oil on the palms. Take a big lemon size portion from the veggie mixture. Create a cavity and add 1 to 2 mozzarella cheese cubes  into the cavity.  Roll the portion back into a ball. The mozzarella cheese should be well covered. Roll the ball in the remaining bread crumbs. Heat the oil, repeat the process with the remaining veggie mixture. Once the oil heats up add the veggie bombs into the hot oil. Fry on medium heat until golden brown on all the sides. Serve the veggie bombs with tomato ketchup  and a hot cup of tea.

Vegetable Chops

 



This year Durga Pujo and Pet Pujo both are to be celebrated within the four walls of our home. It’s better to be safe than sorry. Thanks to the technology that there are live streaming of rituals, performances and zoom adda from any part of the world that you are situated in. 
As this year pet pujo is at home.. hence I made vegetable chops without onion and garlic to cherish the memories of the last year Durga Pujo .. it is served with Kasundi and salad 

Ingredients
1 cup grated Beetroot
1 cup grated Carrots
2 grated Boiled Potatoes
1 or 2 chopped Green Chillies
1/2 tsp grated Ginger
Few Raisins
Few broken Cashew nuts 
Salt to taste 
1 tsp Bhaja Masala powder ( 1/2 tsp Cumin seeds, 1/2 Coriander seeds and 1 dry red chillies - Roast it and grind it in a grinder)
1/2 tsp Garam Masala powder
1/2 tsp Cumin powder 
1/2 tsp Cumin seeds
1/2 tsp Sugar
1 Bay leaf
2 tsp Ghee
4 tbsp  Corn flour or Maida  + 1/4 cup or little more Water mix to make a slurry 
1 cup Bread crumbs 
Oil to fry 

Method
Take a pan, add Ghee, let it melt, add the cumin seeds, bay leaf, green chillies and grated ginger. Sauté it for few seconds. Add the cashew nuts and raisins, sauté until the cashews turn light brown in colour. Add the beetroot, carrot, potato, sugar, salt, cumin powder and garm masala powder. Stir and cook all the ingredients together until the ingredients binds well. Add the bhaja masala and mix the ingredients again. Switch off the flame, remove the mixture into a plate and let it cool down. Take lemon size portion from the mixture and give the ball a oval shape, repeat the process. Take the slurry and the bread crumbs. Dip the chops into the slurry and then coat the chops with the bread crumbs, repeat the process one more time. Heat up the oil in a wok, add the chops into the oil, fry the chops on a medium flame until golden brown. Remove the chops on the paper towel. Serve the chops with salad and Kasundi.

Fried Achaari Paneer Sticks

 


Since the festivals are round the corner, here is a very simple and easy vegetarian starter you can make at home. This recipe that I created calls for few ingredients which most of us have at home. This dish can be enjoyed with ketchup and mint mayonnaise dip 

To Marinate the Paneer Sticks
Ingredients
6  Paneer strips - Paneer cut into 3 inches  length and 1 1/2 inches thickness 
4 to 5 tbsp spicy Mango Pickle Masala including the oil of the pickle masala or chilli pickle masala for more spiciness 
Salt to taste 
1/2 tsp Panch Phoran crushed (Equal portion of Nigella seeds, Fennel seeds, Wild Celery seeds or Mustard seed, Cumin seeds and Fenugreek seed)
6 inches 6 Bamboo Skewers

Method
Take a bamboo and insert the paneer strip gently into the stick, till the tip. Take a bowl, add crushed panch phoran , salt and the pickle masala into the bowl, mix all the ingredients together. Apply the masala on the paneer strips and keep it aside to marinate while we make the batter and proof the batter. 

To make the Batter 
Ingredients 
1 1/2 cup All Purpose Flour / Maida
2 tsp Dry Yeast
1 cup and more as required Lukewarm water
Salt to taste
1 tsp Sugar 

Method 
Take a rectangular container, add 1 cup lukewarm water, sugar and yeast. Mix all the ingredients together. Keep it aside until the yeast rises. Now add a cup of flour and salt into the same container, mix the flour into the yeast water, add the remaining flour and mix the ingredients together into a smooth thick batter, while whisking add extra water only if required. Keep the batter aside to rise. 

To make the Paneer Sticks
Ingredients 
Marinated Paneer
Batter
Oil to fry 

Ingredients 
Take a pan, add oil, let the oil heat, reduce the flame. Take a marinated paneer stick, dip the paneer stick into the batter, coat the paneer strips well. Fry the paneer strips until golden brown in colour. Remove the fried paneer strips on the paper towel. Serve the paneer strips with tomato ketchup and mayonnaise dip.

Discarded Sourdough Starter Whole Wheat Bread


We can create great dishes out of the discarded sourdough starter. So keep them and use them, instead of throwing them. 
Tried this Discarded Starter whole wheat bread.. it’s tasty.... do try them..

Sourdough Yeast Starter



Ingredients 
2 1/2 cup Whole Wheat Flour
2 cups of Sourdough Discarded Starter 
1 tsp Pink Salt
2 tsp Honey 
1/2 cup Lukewarm Water
1 tbsp Oil



Method 
Take a mixing bowl, add the whole wheat flour and the discarded starter. Knead the ingredients together for 2 minutes. Add the honey, salt and lukewarm water. Continue to knead until all the ingredients comes together and forms a dough. Apply oil and cover the bowl and leave the dough to rise. It will take 2 to 4 hours.  Sprinkle some dry whole wheat flour and knead the dough by stretching and pushing for a minute. Roll and shape up the dough.  Sprinkle some flour into the basket the dough will be proofing. Put the dough and cover the basket with a cloth. Cover and let it rest for 30 minutes to an hour. Meanwhile start the oven at 250 celsius and preheat for 15 minutes. Take a baking tray, put a parchment paper on the baking tray. Gently turn the dough on the paper from the basket. Take a new blade and score the bread as per the desire. Take a small bowl of water and keep it on the lower rack of the oven. Keep the baking tray in the middle rack, bake at 225 degrees celsius for 5 minutes. Then reduce the temperature to 200 degrees celsius and bake for 15 minutes, reduce the temperature to further 175 degrees celsius and bake for 20 minutes. Switch off the oven, the bread stay for 5 minutes in the oven, keep the oven door slightly open. After 5 minutes open the oven and remove the baking tray. Keep the bread on a cooling rack until it cools down. After it cools down than you can slice it.

Pizza base with Discard Sourdough Starter and Whole Wheat Flour Batter


Pizza base made with discarded sourdough starter and whole wheat flour batter... loaded with homemade pizza sauce and mozzarella cheese. I don’t throw discarded sourdough starter...
This time I made easy pizza base without kneading... came out well.
Those who want to start the sourdough starter, here is the link below-
Sourdough Yeast Starter



Ingredients
1 cup of Discarded Sourdough Starter
2 1/2 cup of Whole Wheat Flour
1/2 tsp Instant Yeast
Salt to taste
1 tsp Sugar
Lukewarm Water as required
1 cup of Pizza Sauce
1 medium block of Mozzarella Cheese
Vegetables of your choice like capsicum, onion, tomato, olives and chillies..

Method
Take the discarded starter, add the sugar, instant yeast and 1/2 cup of lukewarm water. Mix and leave it for 15 minutes. Now add the wheat flour, salt and more lukewarm water to make a thick batter. Leave the batter to rise. Take a pizza tray, pour the batter.. depending upon how thick you want the bread to be. Tap it and leave it covered for 15 minutes. Bake in a preheated oven at 180 degrees celsius for 10 to 15 minutes. Remove the pizza tray... prick the base with a fork and then spread the pizza sauce and add the cheese. Bake it for 10 minutes, remove and add the vegetables and bake it again for another 10 minutes.

Masoor Dal aur Sabji ke Pakore


Hungry, missing chai pakore stalls and want some tasty delicious snacks with garma garam chai, then try out this easy and quick to make snacks... this pakora can also be made with dals like moong and chana or can be made with mixed dal. Serve this pakora with chutney and tomato ketchup or imli ki chutney. It’s delicious. 

Ingredients 
  • 1/2 cup Split Red Lentils / Masoor Dal washed and soaked in water for 30 minutes 
  • 1 small Onion chopped
  • 2 Green Chillies chopped
  • 1 tbsp Coriander leaves chopped 
  • 1/4 cup chopped mixed vegetables ( carrot, capsicum, beans, cabbage )
  • Salt to taste
  • 1/2 tsp Turmeric powder 
  • A pinch of Soda Bicarbonate 
  • Oil to fry 


Method 
Take the soaked Masoor Dal and drain out excess water. The Masoor Dal has to be coarsely ground into a paste. The paste should be of thick dropping consistency. Remove the paste in a bowl. Add salt and turmeric powder, stir or whisk the paste well in one direction to incorporate air. Take oil in a wok and let it heat. Add the onion, green chillies, vegetables and coriander leaves. Mix well. Add the soda bicarbonate and mix well.. Reduce the flame to medium. Add one tbsp of the paste into the hot oil, repeat the process for 5 to 6 times or until the wok is filled with the pakoras. Fry the pakoras until crispy and brown in colour. Serve hot with green chutney and tomato ketchup. Enjoy the pakoras with a cup of garam chai.

As we talk of zero wastage... here is an interesting traditional Gujarati snack recipe with grated watermelon rind. Muthiya can be had steamed or fried. It’s a delicious, healthy and a filling dish. It’s perfect to enjoy with an evening cup of chai..

Ingredients 
1 cup Grated Watermelon Rind
1 tsp Ginger and Green Chilli paste 
1 tsp Lime Juice 
1 tbsp chopped Coriander leaves 
Few Curry Leaves
1/2 cup Whole Wheat flour 
1/2 cup Chickpea Flour
1/4 cup Fine Semolina 
Salt to taste 
1/2 tsp Sugar
1/2 tsp Turmeric powder 
1/4 tsp Cumin seeds
2 pinches of Baking Soda
1/4 tsp Asafoetida
1/2 tsp Mustard Seeds
1/2 tsp Sesame Seeds
3 tsp Oil 



Method 
Take a bowl, add the grated watermelon rind, whole wheat flour, semolina, chickpea flour, ginger - chilli paste, turmeric powder, cumin seeds, lemon juice, sugar, coriander, baking soda, salt and 1 tsp of oil. Knead the ingredients into a soft dough. Keep it aside for 5 minutes. Apply oil on the palms and divide the mixture into 2 portions. Shape each portion into a cylindrical roll. Arrange the rolls on a greased sieve and steam in a steamer for 20 minutes. Once done, insert a toothpick and check. Remove and cool the muthiya,  cut the rolls into slices and keep aside. For the tempering, heat the remaining oil in a pan and add the mustard seeds, curry leaves, sesame seeds and asafoetida and sauté it for few seconds. Add the muhiya pieces and toss them for a minute. Garnish it with coriander leaves and serve it hot.

Mangalore Buns



I love Mangalore Buns.. especially whenever I have visited Mangalore, I have had them at my Friend’s in-laws place..
It is a popular breakfast and tea time snack in Udupi-Mangalore region. They are sweet, fluffy puris made using banana. The dough is left overnight to ferment.Its normally, served with a spicy coconut chutney and sambar... I have used Whole wheat flour..
 Ingredients
2 cups Whole Wheat flour / All Purpose Flour
2 medium sized Ripe banana
2 tbsp Sugar
½ tsp Cumin powder
1/4 tsp Baking soda
Salt to taste
2 tbsp Curd
1 tsp ghee
oil for deep frying

Method
Take a mixing bowl, mash the bananas, now add sugar, salt,  cumin powder and curd . Mix the ingredients well into a smooth paste. Add the flour and knead the flour into a dough, add little more flour if required. The dough is slightly sticky. While kneading you can apply some ghee and knead. Keep the dough covered in a bowl overnight. Knead the dough the next morning. The dough is a bit sticky, so dust some flour and take medium sized balls from the dough and roll into round pooris. Fry each poori into medium hot oil till they are puffed and golden. Serve the buns as snacks with coconut chutney.
